Herb chicken and vegetables is a flavorful and healthy meal that is easy to make. To make this dish, you will need boneless, skinless chicken breasts, onion, garlic, a selection of herbs (such as rosemary, thyme and oregano), olive oil, and vegetables of your choice (such as bell peppers, mushrooms and broccoli).

First, preheat your oven to 375 degrees Fahrenheit. Then, cut the chicken into cubes and season with salt, pepper, and the herbs of your choice. Heat a tablespoon of olive oil in a large skillet over medium heat and add the chicken cubes. Cook until the chicken is lightly browned, then transfer to a baking dish.

Next, add another tablespoon of olive oil to the skillet and add the onion, garlic and vegetables. Cook until the vegetables are tender and then mix with the chicken in the baking dish.

Finally, drizzle the dish with a bit more olive oil, sprinkle with herbs and bake for 25-30 minutes or until the chicken is cooked through. Enjoy!
