Elderberry is the fruit of the elder tree, a flowering shrub in the honeysuckle family.
Elderberry may be baked in pies, or prepared as jam, jelly, or a preserve. The berries are also used to make wine and cordials. Full of vitamin C!

Elderberry Nutrition
Elderberries are high in vitamin C (52.2 milligrams per cup) and dietary fiber (10.2 grams per cup). One cup of elderberries also has roughly 26.7 grams of carbs, 0.7 grams of fat and 1 gram of protein
Elderberry shrub: A shrub is a fruit-infused, vinegar-based syrup that is typically mixed with soda water to create a refreshing beverage. You can also use a shrub to enhance the flavor of salad dressings or to glaze roasted meats.
Place the elderberries and vinegar in a saucepan. Gently heat just to the boiling pot, then remove the pan from the heat and let rest, covered, for 30 minutes.
Strain, reserving the liquid. Return the infused liquid to the pan and add the sugar.
While stirring, bring the mixture to a boil. Remove from heat and let cool slightly.
Pour into a clean, glass jar with a tight-fitting lid. Store in the refrigerator and use with 4-6 weeks.
